Aloo Beans

Ingredients

For the sabzi

  • 16 ml Mustard oil
  • 0.5 g Cumin seed / jeera
  • 6 g Garlic, finely chopped
  • 6 g Ginger, fresh, finely chopped
  • 4 g Green chillies, finely chopped
  • 200 g Potato, peeled and diced
  • 200 g French beans, hybrid, raw, diced
  • 3 g Salt
  • 1 g Turmeric / haldi
  • 2 g Coriander seeds - whole / ground, powdered
  • 1.2 g Dried chillies, powdered
  • 0.6 g Garam Masala
  • 0.6 g Amchur, powdered

Kadai or saute pan

Advance preparation

No advance prep required beyond washing, trimming beans and chopping potatoes / aromatics.

Instructions:

For the sabzi

  • Heat mustard oil in a pan until almost smoking. Add cumin seeds and allow these to crackle.
  • Add chopped ginger, garlic and green chillies. Fry on medium flame for ~30 seconds.
  • Add diced potatoes, beans, salt, turmeric, coriander powder, and red chilli powder. Mix well. Cover and cook for ~10 minutes, until the potatoes and beans are cooked through.
  • Add garam masala and amchur and mix. Cook for ~1 minute.

Serving guidance

Serve hot with phulka, roti or dal-rice; best eaten fresh while the beans still retain some bite.
