Ingredients
For the sabzi
- 16 ml Mustard oil
- 0.5 g Cumin seed / jeera
- 6 g Garlic, finely chopped
- 6 g Ginger, fresh, finely chopped
- 4 g Green chillies, finely chopped
- 200 g Potato, peeled and diced
- 200 g French beans, hybrid, raw, diced
- 3 g Salt
- 1 g Turmeric / haldi
- 2 g Coriander seeds - whole / ground, powdered
- 1.2 g Dried chillies, powdered
- 0.6 g Garam Masala
- 0.6 g Amchur, powdered
Instructions:
For the sabzi
- Heat mustard oil in a pan until almost smoking. Add cumin seeds and allow these to crackle.
- Add chopped ginger, garlic and green chillies. Fry on medium flame for ~30 seconds.
- Add diced potatoes, beans, salt, turmeric, coriander powder, and red chilli powder. Mix well. Cover and cook for ~10 minutes, until the potatoes and beans are cooked through.
- Add garam masala and amchur and mix. Cook for ~1 minute.
To serve
- Transfer the sabzi to a serving bowl. Garnish with chopped coriander. Serve hot.
