Ingredients
For frying
- 240 g Potato, washed, peeled and cubed
- 150 ml Sunflower oil
For the curd mix
- 120 g Curd (dahi), whisked
- 2 g Turmeric / haldi
- 3 g Dried chillies, powdered
- 2 g Coriander seeds - whole / ground, powdered
- 2 g Cumin seed / jeera, powdered
For the gravy base
- 1 tbsp Sunflower Oil
- 80 g Onion, peeled and sliced
- 60 g tomato, sliced
- 8 g ginger, chopped
- 8 g garlic, chopped
For the tadka
- 1.5 tbsp Cow Ghee
- 1 g Cumin seed / jeera, whole
- 0.08 g Asafoetida (Hing)
- 40 g Onion, chopped
- 4.8 g Salt
- 8 g Kasuri methi
- 0.6 g Garam Masala
To serve
- 8 g Coriander leaves, chopped finely
Instructions:
For frying
- Heat oil in a frying pan. When hot, drop the cubed potato and fry on low-medium heat until golden brown. Strain and set aside.
For the gravy base
- Heat oil in a pan. Add onion and saute until lightly caramelized. Add garlic, ginger and tomato and saute until tomatoes are soft and mushy. Turn flame off and cool the onion-tomato mix. Then blend into a smooth paste.
For the curd mix
- In a bowl, combine the curd, turmeric, chilli powder, cumin powder and coriander powder. Mix well and set aside.
For the sabzi
- In the same pan used to cook the gravy base, add ghee and heat until smoking hot. Add a pinch of hing and cumin seeds. Allow the cumin to crackle.
- Add onion and fry to a golden brown colour. Add the onion-tomato paste and bring to a boil on high heat.
- Add the curd mix, stirring continuously until the gravy comes to a boil. Cook on high flame until the oil separates.
- Add 2 cups of water and bring to a boil. Add the fried potato dices, and simmer for ~10 minutes.
- Using a masher, lightly mash a few pieces of potato to thicken the gravy.
- Add kasuri methi and garam masala. Mix and turn flame off.
To serve
- Transfer to a serving dish. Garnish with coriander leaves. Serve hot.
