Ingredients
For the sabzi
- 16 ml Mustard oil
- 1 g Cumin seed / jeera
- 120 g Peas, green, shelled, raw
- 3 g Salt
- 6 g Garlic, finely chopped
- 6 g Ginger, fresh, finely chopped
- 4 g Green chillies, finely chopped
- 1 g Turmeric / haldi
- 2 g Coriander seeds - whole / ground, powdered
- 1.2 g Dried chillies, powdered
- 320 g Cabbage, raw, thinly sliced
- 0.6 g Garam Masala
- 0.6 g Amchur, powdered
To serve
- 8 g Coriander leaves, finely chopped
Instructions:
For the sabzi
- Heat mustard oil in a pan until almost smoking. Add cumin seeds and allow these to crackle.
- Add chopped ginger, garlic, green chillies, peas, turmeric powder, salt, coriander powder and red chilli powder. Fry on medium flame for ~2-3 minutes.
- Add sliced cabbage. Fry on high heat for 3-4 minutes, stirring frequently, to cook the cabbage but retain its crispness.
- Add garam masala and amchur powder. Cook on high, stirring, for 1 minute.
To serve
- Transfer sabzi to a serving dish. Garnish with coriander. Serve hot, with a lemon wedge on the side.
