Ingredients
For the sabzi
- 125 g Peas, green, shelled, raw
- 140 g Paneer, cubed
- 50 g Onion, chopped
- 80 g Tomato, hybrid, raw, chopped
- 4 g Ginger, fresh, finely chopped
- 3 g Green chillies, finely chopped
- 16 ml Sunflower oil
- 0.35 g Cumin seed / jeera
- 0.5 g Turmeric / haldi
- 0.7 g Dried chillies, powder
- 3.5 g Salt
- 1 g Coriander seeds - whole / ground, powdered
- 0.5 g Garam Masala
To serve
- 5 g Coriander leaves, finely chopped
Instructions:
For the sabzi
- In a pan, add half the oil and turn on the heat until the oil is near smoking. Add cumin seeds and allow them to crackle.
- Add paneer cubes and cook on high heat, allowing paneer to caramelize lightly on all sides. Remove from pan and set paneer aside.
- Add the remaining oil into the same pan and turn flame to medium. When the oil is hot, add the chopped onion and fry until lightly caramelized.
- Add chopped tomatoes, ginger, green chillies, turmeric, coriander powder, red chillies and salt. Saute on medium flame until the tomatoes are cooked. Add 1 cup of water and bring to a boil. Simmer for 2-3 minutes on low heat.
- Add the roasted paneer and simmer for 2-3 minutes.
- Add garam masala, mix and turn off the heat.
To serve
- Transfer the sabzi to a serving bowl. Garnish with chopped coriander. Serve hot.
