Ingredients:
- 250 grams 50% dark chocolate, chopped
- 150 grams granulated sugar
- 200 grams flour
- 20 grams cocoa powder
- 50 grams butter
- 2 large eggs, raw
- 3 grams baking powder
- 1/4 tsp salt
- 1.5 tsp instant coffee
- 1 tsp vanilla extract
Instructions
Dough preparation
- Melt chocolate and butter in a double boiler
- Mix dry ingredients in a large bowl - sift flour and cocoa powder; add baking powder, salt and instant coffee. Mix well
- In a bowl, add the egg (yolks and white), sugar and vanilla extract. Beat well with an electric mixer until light and fluffy
- Add egg-sugar mix into the dry ingredients. Using a spatula mix well until a sticky dough is formed.
- Add melted chocolate. Mix again, using your hands if necessary, into a soft dough
Making the cookies
- Divide the dough - into approximately 30 parts
- With lightly oiled hands, shape each dough portion into a sphere. Flatten each dough ball into a flat disc, and place on a lightly oiled baking tray
- Cover with cling film and chill in refrigerator for at least 30 minutes
- Preheat oven to 160 C
- Bake at 160 C for 12-13 minutes.
- Remove from oven and cool
Serving & storage
- Serve with coffee or enjoy as a dessert
- Store in airtight container
- Consume within 5-7 days
