Sesame Soba Noodles

Ingredients

For the noodles

  • 100 g Soba Noodles, Raw, raw
  • 1000 ml Water
  • 5 g Salt
  • 10 ml Sesame oil

For the sauce

  • 80 g Red bell pepper, sliced
  • 16 g Ginger-garlic paste
  • 15 g Soy Sauce, light
  • 10 g Rice vinegar
  • 8 g Honey
  • 5 g Chilli Sauce
  • 8 ml Sunflower oil
  • 0.5 g Salt
  • 0.5 g Black pepper, ground

For serving

  • 6 g Sesame, white, toasted
  • 40 g Green onion, chopped

Instructions:

For the noodles

  • Add salt and water to a pan. Bring to a boil on high heat
  • Add raw soba noodles. Reduce heat to medium and cook until al-dente (5-6 minutes)
  • Drain and rinse under cold running water to stop further cooking. Add sesame oil and toss. Set aside

For the sauce

  • Combine soy sauce, rice vinegar, honey and chilli sauce in a small bowl.
  • Heat sunflower oil in a pan. Add ginger-garlic paste and saute for 30 seconds on high heat.
  • Add bell peppers and saute on high heat for 90 seconds
  • Add the soy sauce mix. Simmer for 30 seconds
  • Add the cooked noodles. Toss on high heat for 30 seconds.

For serving

  • Transfer cooked noodles to a serving bowl. Garnish with chopped green onions and toasted sesame seeds. Serve warm.
