Cholai, also known as Amaranth, is one of the oldest grains cultivated in India, valued for its light, nutty flavour and naturally high nutrient density. Cholai Atta is made by grinding the tiny, seed-like grains into a fine flour that can be used for rotis, parathas, porridge, laddoos, chillas and festival foods like vrat rotis.
Unlike many cereals, amaranth is a pseudocereal — meaning it is botanically different from wheat and rice — and naturally gluten-free. It stands out for being a good plant source of protein with a more complete amino acid profile, particularly rich in lysine, an amino acid that is often low in other grains.
Cholai flour also contains dietary fibre and naturally occurring minerals like iron, magnesium and phosphorus, along with phytonutrients that lend it its warm color and earthy aroma.
