Our Kerala Cinnamon Flakes are made from true cinnamon bark, not cassia. True cinnamon has a naturally delicate, warm and lightly sweet aroma with a soft, layered flavour that is noticeably more refined than the sharper, woody taste of cassia. The bark is thin and brittle, which allows it to break into flakes that infuse evenly in tea, curries and desserts.
This is the cinnamon traditionally used in South Indian and Sri Lankan kitchens for its subtle, aromatic character.
